PICON PUNCH
This 19th-century cocktail originated in Marseille, France, by way of Bakersfield, California, where it was regularly prepared for the local Basque population. The main ingredient, a bitter French digestive called Amer Picon, is unfortunately no longer commercially available in the United States. But that didn't stop the bar team at San Francisco's 15 Romolo.

Ingredients
For 1 cocktail : Show liquids in centiliters (cl)- 1.5 Oz Sirop de Picon
- 0.5 Oz Grenadine Syrup
- 0.5 Oz Brandy
- Sparkling Water
Cocktail directions
- Pour the Amer Picon and grenadine into a punch glass over ice and stir briefly.
- Fill almost completely with sparkling water.
- Float the brandy on top, pouring it in carefully.
Cocktail service
Served in a punch glass.
Bartender's tips
Garnish the glass with a lemon zest.
