PISCO SOUR
Pisco is said to have been invented in Peru by Italian immigrants in order to "recreate" Italian grappa. Pisco is the Peruvian city where the grape alcohol of the same name was born. The Pisco sour is a very popular cocktail in Peru as an aperitif, very refreshing, with a foamy texture provided by the egg white (of which you absolutely cannot taste).
Ingredients
For 1 cocktail : Show liquids in centiliters (cl)- 3.5 Oz Pisco
- 1.5 Oz Lime juice
- 0.5 Oz Sugar Cane Syrup
- 1 Egg White
- 1 Pinch of Cinnamon Powder
Cocktail directions
- Mix the pisco, lemon juice and cane syrup.
- Beat the egg white until stiff (with the teaspoon of sugar if necessary), then mix with the rest of the ingredients in a shaker.
- Shake the ingredients in a shaker with ice cubes.
- Pour while filtering the ice.
Cocktail service
Add the crushed ice just before serving into the cocktail glasses.
Bartender's tips
Add a pinch of cinnamon powder on top of the glass, on the foam formed by the egg white (which you can't smell at all, don't worry).
